Easy Toddler Meal Taco Pasta Salad

Finding foods that are inexpensive, easy, and that your toddler will enjoy and can easily eat can be difficult. Especially, when you want to be able to prepare foods that the whole family can enjoy.

Today's busy world hardly leaves time for caregiver's to prepare a meal. This recipe is perfect as it is a one dish meal!

~You will need for this recipe~

1 Package Spiral Pasta
1 Pound Ground Beef
1 Envelope Taco Seasoning Mix
3/4 Cup Water
2 Tomatoes, chopped finely if serving young toddlers
1 Medium Onion, chopped finely if serving young toddlers, can also be omitted
2 Cups Shredded Cheddar Cheese
1 Cup Sliced Black Olives
1 Cup Frozen Golden Corn
1 Cup Black Beans, rinsed and drained
1 1/2 Cups Taco Sauce, can be substituted with 1/2 Tomato Soup and 1/2 Taco Sauce to reduce spice if needed, or served on the side
4 Cups Shredded Lettuce

Cook pasta using package directions; rinse with cold water and drain well. Cook ground beef in skillet. Make sure to break into small crumbles and drain. Add taco seasoning mix and water. Bring to a boil; reduce heat. Simmer for 10 minutes, stirring occasionally. Combine cooled pasta, ground beef mixture, tomatoes, corn, black beans, onion, cheese, and olives in a salad bowl. Add taco sauce; toss lightly. Spoon onto lettuce-lined plates and garnish with salad, corn chips, and guacamole.

You can break the lettuce into pieces if your toddler is able to chew it, or omit it on their plate and provide them with just the pasta.

This recipe is perfect for getting young ones learning to like adult foods. It provides them a selection of foods that they can choose from. Toddlers love variety, they may not eat the ground beef, but love the pasta. Either way, they are enjoying a supper that the whole family can enjoy!
